Hong Kong Style Beef Chow Fun



Hong Kong style beef chow fun is a staple dish of Cantonese cuisine.  To make this dish at home, I recommend using a nonstick wok or a nonstick deep frying pan to ensure the rice noodles don't stick and break into little pieces.


INGREDIENTS:

½ lb flank steak cut into 1” long thin slices
1 pkg of flat rice noodle at room temperature cut into ½” strips (available at any Asian grocer)
½ med sliced yellow onion
½ c bean sprouts
2 slices of ginger julienned
2 sprigs of green onion chopped into 1” pieces
1 T cooking oil
1 T dry white wine
½ t salt

MARINADE FOR BEEF:

1 T cornstarch
½ t salt
1 T dry white wine
1 T cooking oil
A pinch of sugar
A few dashes of white pepper
1 T light soy sauce
½ t sesame oil

SEASONING:

2 T light soy sauce
1 t dark soy sauce
1 t sesame oil
A few dashes of white pepper
A pinch of sugar

PREPARATION:

• Marinate beef for at least ½ hour.
• Heat wok on high heat until very hot then add oil.
• Add salt, ginger, and beef to wok and stir fry for 1-2 minutes.
• Add yellow onion and stir fry until it’s transparent.
• Add noodle, green onion, and seasoning to beef mixture.
• Mix thoroughly.
• Transfer to plate and serve.
